Sage Roasted Winter Vegetables ?

We visited our local farmers market this morning and I was inspired by the amazing selection. We decided upon fennel root, crimini mushrooms, yellow onions, and rainbow carrots, all packed with freshness & nutrients. You can just taste the sunshine!

Here’s the basic prep for a wonderful dish of herb roasted winter vegetables:

Rinse and cut vegetables into large chunks, drizzle with ½ cup of extra virgin olive oil and a half cup of dry white wine. Add white sage, sprinkle generously with sea salt & freshly ground pepper as desired. Cover with foil & place in pre-heated oven at 375 F (190 C) for 30-minutes, remove foil & let it cook an additional 10 – 15 minutes, until vegetables are still crisp, yet just soft enough to penetrate with a fork.

Voilà! A fabulous, easy, and nutritious side dish! ?
