Wild Berry Stuffed French Toast

On this day of celebrating our country’s independence, I thought I’d post my favorite red, white & blue breakfast of champions!  ??

The inspiration for this glorious treat began with picking up a loaf of extra-thick cut cinnamon swirl bread from Trader Joe’s. We love this bread because it makes creating a delicious breakfast quick and easy. And let’s face it, today is a holiday, so lets make it fun while keeping it simple…

 

Wild Berry Stuffed French Toast

 

Ingredients

1 loaf of extra-thick cut cinnamon swirl bread
6 eggs
¾ cup milk
Coconut oil spray
1 cup of each: fresh raspberries, blue berries & black berries (*Can be made with fresh peaches, nectarines, strawberries, apples, or whatever fresh fruits are in season. You can also use frozen fruit with this recipe.)
8 oz. tub of Mascarpone sweet cheese spread
¾ cup of high quality wild berry preserves
½ water to thin preserves
Powdered sugar for dusting top

 

Preparations

While griddle is heating up to medium-high, mix up the eggs and milk for dipping your bread in the blender on high for 60-seconds. Once blended, place into a platter. Slice the bread in half diagonally, then dip both sides in the egg bath, allowing each slice 8 – 10 seconds to absorb the liquid. Once griddle is heated, spray with coconut oil to prevent the toast from sticking.

Chef’s Note: If you’re using a well-loved, properly seasoned cast iron griddle, you may not need to apply oil. However, I like the lovely, nutty flavor coconut oil brings to this dish!

Place dipped toast onto the hot griddle and cook until both sides are golden brown. If working in batches, place the cooked bread in a warm oven.

While toast is browning, rinse berries and heat up ½ cup of water in a small pot. Once water is boiling, add preserves and reduce heat, stirring to keep from burning. You may need to add a bit more water to create desired texture.

Once all toast is browned, spread Mascarpone sweet cheese generously on plated French toast, add a large spoon of wild berries, placing another piece of toast on top. To complete the dish, drizzle the top with berry preserves and serve immediately.

With each bite, you will enjoy the mingling flavors of the juicy berries and sweet cheese dancing across your taste buds. Yummmm!
