Parisian Lox & Bagels Brunch

This brunch is our daughter’s very favorite lazy-weekend breakfast. We buy fresh bagels the afternoon prior so we can wake up in the morning ready for a truly pleasurable, relaxed meal. I usually get the variety bagels that have a bit of everything on top, rather than a specific topping like plain or sesame seed. It’s important to locate a good source for Wild-Caught Smoked Salmon (NOT Farmed Salmon) to ensure high quality lox, without the unnatural addition of toxins, antibiotics, dyes, or growth hormones present.

I usually add fresh dill, a bit of cracked black pepper, and freshly squeezed Meyer lemon juice to the top of the lox for an extra bit of flavor. The bagels are accompanied by cream cheese and a vast variety of options available to us from our garden, and supplemented by the local farmers market. Here a just a few of our favorites! Ripe avocado, fresh-picked basil leaves, sliced tomatoes and cucumber from the garden, thinly sliced red onions, peppery arugula, cilantro, a small bowl of capers, and finally, a splash of freshly squeezed lemon.

Ingredients
  • 1 lbs. Sliced Wild-Caught Smoked Sock-Eyed Salmon
  • 1 bar of cream cheese
  • 4 bagels, sliced in half and toasted in the oven until slightly browned and crisp
  • 1 freshly sliced organic English cucumber
  • 1 – 2 ripe avocado, sliced
  • ½ red onion, thinly sliced
  • 2 – 3 freshly sliced, vine-ripened tomatoes
  • Arugula leaves
  • 1 sliced lemon
  • Capers
  • Garnish with fresh cilantro or basil leaves, discard stems

We like to accompany this brunch with a bowl of fresh-cut fruit like bananas & raspberries, mango & papaya, strawberries and blue berries, or multi-colored organic grapes, etc.

Preparation

Slice and toast bagels at 350 degrees for 4 – 6 minutes. While bagels are toasting, prepare sliced vegetables, fruit salad and squeeze lemon, black pepper and fresh herbs over lox. Place all ingredients on the table and dig in!

Le Voov! Side Note: Sometimes we add flavored hummus such as sun-dried tomato or zesty garlic hummus to this meal just for a bit of culinary fun!
